These molds are handmade in Northern Portugal out of galvanized steel and are the same ones used by professional bakeries throughout Portugal to make the famous Portuguese custard tarts (Pastéis de Nata)
If you fell in love with the irresistibly creamy custard tarts that you had in Portugal and wish to recreate them at home, using the tins that were made for Pastel de Nata will give you a much better result than using muffin tins or silicone molds
These steel molds are the highest quality and most durable that you can get. They will withstand the high temperatures needed to properly bake the tarts giving them that shatteringly crisp pastry crust
Seasoning prior to first use is required (instructions are included) | Non-stick after seasoning.
For best results, clean with water and a dry cloth only. With the proper care these tins should last you for many years to come.
Available in two sizes: standard and small. The only difference between the sizes is the height, so it really comes down to your preference of the ratio between filling and crust.
Standard is deeper so it holds more custard filling than the small. It measures 3.5 cm at the base, 7 cm at the top (mouth) and is 3 cm in height. Choose this one if you prefer slightly more custard filling in your tarts.
Small measures 3.5 cm at the base, 7 cm at the mouth and is 2.3 cm in height. Many bakeries such as Manteigaria and Aloma use this smaller size for their award winning Natas. Choose this size if you prefer slightly more crust to custard.
